Ingredients for Southern potato salad

Freshly ground black pepper
Salt
0.5Lemon juice thereof
1Small red onion chopped fine
12Pitted green olives, cut in half
2tbspChopped fresh basil
25gPine nuts toasted lightly
4Eggs hard boiled and peeled
4Plum tomatoes, roughly chopped seedless
4tbspExtra virgin olive oil

Instructions for Southern potato salad

To prepare the Southern potato salad recipe, please follow these instructions:

Boil the potatoes in lightly salted water in 12-15 minutes, until just tender. Let them drain, cut them in half and add to a large bowl.

Whisk 1 tbsp. of lemon juice, olive oil, Basil and liberally salt and pepper together in a small bowl. Pour the dressing over the potatoes and style them to cool.

Add the chopped onion, olives, chopped tomatoes and pine nuts and toss it well together. Immediately before serving chop eggs coarsely and sprinkled over salad, which turned over quickly.
