Brown perlehøne the breasts with the skin side down. When they are golden, turn over and fry the finished. Season with salt and pepper. Stir the mayonnaise with Cumin and lemon juice. Chop the cabbage, carrot and celery fine. Stir it together with mayonnaise and a little tarragon. Server to the fried breasts.
