Instructions for Pommes duchesse
To prepare the Pommes duchesse recipe, please follow these instructions:
Peel the potatoes and cut into smaller pieces. Boil them tenderly, approx. 20 min., Drain the water and steam them dry.
Mash the potatoes through a sieve and stir with egg yolks and butter. Season with salt and pepper.
Fill in a sterile syringe bag. Sprinkle the pulp on small-scale baking paper.
Bag for 10 min. At 225 degrees C. alm. Oven until golden brown.
Can also be sprayed into a ring on a refractory dish (or plate stick) and served with the "steak" in the middle.
