Instructions for Oven baked dark jam
To prepare the Oven baked dark jam recipe, please follow these instructions:
Potato bottom:
Peel and cook the potatoes until they are almost tender. Cut them into thick slices and turn them into olive oil. Arrange the potatoes in a greased ovenproof dish and season with a little salt.
Fish:
Tip: Season the fish with salt and cool them for 20 minutes. Before cooking. This gives a more firm meat structure and brings more flavor to the fish. Cut the fish into pieces and place them on top of the potatoes.
Onion / tomato ragout:
Sprinkle the shallots and finely chop the bacon. Season it all in a little oil and add finely chopped garlic and thyme. The tomatoes are cut into the tern and added together with the wine. Smash it all for a few minutes and season with salt and pepper.
Half of the ragout is spread over the potatoes. The rest of the ragout is mixed with rasp and grated parmesan (or cheddar cheese if you prefer) and spread over the fish pieces.
The dish is baked in a 200 degree hot oven for approx. 20-25 min. Depending on the thickness of the fish. Finally sprinkle with chopped parsley.
