Instructions for Oranges à la Hans
To prepare the Oranges à la Hans recipe, please follow these instructions:
Peel the orange with a knife, make sure all white barriers are cut away. Cut slices of the orange and put them on a small dish or plate. Shake the nuts light brown in a little butter, stir them constantly so that they do not burn on any of the sides. Sprinkle the nuts over the orange slices. Whip the egg yolks over water bath with white wine, sugar and a little lemon juice. Whip constantly for a thick, airy and delicious sabayonne. Be careful not to get too hot so the eggs coagulate.
Directions: Pour the sabayon over the orange peel.
