The egg whites are flushed well with a fork and the sugar spreads on a piece of parchment paper. Each flower head is dipped first in the airy egg white that acts as a glue. Then the flower is put in the sugar and the sugar is shaken over the flower with the parchment paper. When all heads are candied, place them on an oil-lumped parchment paper and put them in a warm place for drying - near the baking oven. The temperature must never exceed 50 degrees because the fragrances of the flowers will otherwise evaporate. The ready-made violets can be stored on cuddles on the oiled parchment paper in layers.
