Cut the eggplant into thin slices.
Pour egg whites into a bowl and whisk it until light and foamy. Mix maizena, salt and spice in a deep dish. Heat the oil to fry in a wok or pan. Dip each eggplant slice into the whipped egg white and then turn them into the maizena and spice mixture.
