Eggplant salad with Parma ham: Arrange the salad leaves to cover the plate. Shake the eggplant slices in the olive oil, with salt and pepper, and spread them on top of the salad. Place the ham nicely on the aubergines. Stir cottage cheese, quark, lemon, salt and pepper together and put on top of the ham. Finally, olives and wells are arranged fine on top.
