Culotten trimmings and place it in the roasting pan or a heat-proof platter.
Brown the roast with oily upwards in 10-15 minutes.
Turn down the heat and cook for 20 minutes

Take the roast out and let it rest for at least 30 minutes.
Sprinkle coarse salt on roast meat before serving.
