To prepare the Cold cucumber-Orange soup recipe, please follow these instructions:
Peel the cucumber and cut it into thin slices. Lay slices flat on a plate and sprinkle them with salt. Put another plate on top, then cucumber slices are pressed lightly. Let them stand for about 20 min. Peel 2 oranges and cut into thin slices. Squeeze the juice of the 2 remaining oranges and mix with lemon juice and Peppermint tea. Rinse the cucumber slices and mix them in the broth, then add the orange slices. Garnish with Mint or watercress and serve chilled.
