150 | g | Dark chocolate 44% |

To prepare the Chocolate mousse VIIII recipe, please follow these instructions:
Melt chocolate in water bath:
Put a pan over with water. Chop the chocolate well and place it in a small bowl. Put the bowl gently into the pan with the boiling water. It is called a water bath. Turn off the flare and let the chocolate melt. Remove the bowl from the heat. Allow the chocolate to cool slightly until the chocolate is viscous.
Stir egg yolks and possibly. Finely chopped orange peel in the melted chocolate.
Whip egg whites stiff with sugar in a bowl.
Whip the cream to whipped cream in another bowl.
Carefully turn the stiff egg whites into the chocolate box with a scraper. Then turn the whipped cream in until the chocolate mousse is solid and even.
Pour the chocolate mousse into serving glass and allow the mousse to stiffen in the refrigerator for at least 1 hour. Decorate with whipped cream and chopped chocolate.
