Whip the cream stiff. Whisk the sugar and egg yolks bright and airy. Melt the turtles over a water bath. Whisk the melted turtles in æggesnapsen and then gently turn the cream skimmed herein. Pour into a form that is closed with a lid, staniol or vitawrap and is made in the freezer in 4-5 hours. It is not necessary to stir in the ice along the way if the container is airtight. Taken out 15-30 min before serving.
