Instructions for 40 buns
To prepare the 40 buns recipe, please follow these instructions:
Fermented and break into pieces in the warm water and stir to finger fermented is dissolved.
Add the eggs, sugar, salt and stir it well.
Add flour little by little. When it is not to touch together in the Bowl farther then poured the dough out on a floured. Now age the rest of the flour in the dough. Dejes should be soft and supple so beware of getting too much flour in.
When the dough is kneaded thoroughly put it back in the bowl and made withdrawals ½ hour in a warm place, with a tea towel over the bowl. The dough does not tolerate drag.
When the dough has swollen to twice the size, knead it again.
Portion dough into 40 equal portions and roll so 40 buns. Buns raises much so they must not be very large.
Put them on two plate with wax paper and cover them again with tea towels. Now they must raise 20 min.
Before baking, brush the with lukewarm water or eggs.
They bake for approx. 8 min at 220 degrees or 200 g in convection ovens.
Tips:
It is a good idea to add a handful of whole wheat flour in the dough. The dough can also be used for French bread, sausage rolls and pizza snails.
